This morning I experimented with my kids eggs. Instead of scambling in butter alone, I added milk and cheese to the eggs. They ate them up quickly and left me with no eggs lol. When as before, sometimes they wouldn't eat them at all.

Anyone have any casserole recipes you have tried that are really really good and you would share? LOVE casseroles!

Ok, I bet your good at massaging feet? Better yet, how about a pedicure?

Here you go, Nita...and don't listen to anything any guys from graphixground say, I *can* cook...

Make Ahead Mashed Potato Casserole

10 potatoes, unpeeled (about 3.5 pounds)
1/2 lb cream cheese at room temperature
1/4 c. butter at room temperature
1 c. chopped green onions
1 c. dairy sour cream
1/2 c. finely chopped fresh parsley
Pinch dried marjoram
Salt & pepper to taste
1/2 c. coarse fresh bread crumbs

While Vu|ture is stewing in cauldron over the fire in the new fireplace, cook potatoes for 20 minutes until tender but not mushy.
Drain & let cool slightly, peel.
Mash potatoes until smooth; blend in cream cheese and butter until melted.
Mix in onions, sour cream, parsley, marjoram, salt & pepper.

Transfer to 8 inch baking dish, smooth top (of the potatoes not the dish) Sprinkle with bread crumbs.

(Casserole can be prepared to this point, covered and refigerated for to 2 days or frozen for up to 1 week. Let thaw in fridge for 24 hours, add 10 minutes to baking time.)

Bake at 400 F for about 20 minutes or until heated through and the top is lightly golden.

Makes 8-10 servings.

My 12 year old loves this casserole. Come to think of it, he loves anything that doesn't eat him first....
